WILD RICE SOUP
Ingredients
6 tbsp. butter
1 tbsp. minced onion
1/2 c. flour
3 c. chicken broth
2 c. cooked wild rice
1/2 tbsp. salt
1 c. half & half
2 tbsp. dry sherry

Instructions
1. Melt butter in saucepan.
2. Saute onions until tender.
3. Blend in flour.
4. Gradually stir in broth.
5. Cook, stirring constantly until begins to boil.
6. Boil 1 minute.
7. Stir in rice and salt.
8. Simmer 5 minutes.
9. Blend in half & half and sherry.
10. Serves: 4.
11. VARIATION: Add 1/2 cup minced ham and 1/3 cup finely shredded slivered almonds.
