LEMON SOUP
Ingredients
6 c. chicken broth
1/2 c. orzo
2 eggs
1 tbsp. water
2 tbsp. lemon juice
Salt and pepper to taste

Instructions
1. Bring broth to a boil.
2. Add orzo cook until tender about 10 minutes.
3. Remove from heat.
4. In bowl beat eggs until frothy.
5. Add water to lemon juice and slowly add to egg mixture.
6. Very slowly dribble hot broth to egg and lemon mixture beating continuously until you have added a cup or more of broth.
7. Ten pour egg mixture into remaining broth stirring constantly so as not to curdle.
8. Season to taste and serve immediately.
