PEANUT SOUP
Ingredients
1 med. onion, chopped
1 lg. clove onion, minced
1 tbsp. margarine
1 (16 oz.) can tomatoes (broken)
2 c. water
1 1/2 c. peanut butter
1 (13 oz.) can evaporated milk
1/2 tsp. each salt and pepper
Dash cayenne or hot pepper sauce
1 tbsp. minced parsley

Instructions
1. In 3 quart saucepan over medium heat, saute onion, garlic in margarine until tender.
2. Stir in tomatoes, water, peanut butter.
3. Bring to boil, reduce heat.
4. Cover and simmer for 5 minutes.
5. Stir in milk, salt and pepper.
6. Cook stirring occasionally about 10 minutes until soup thickens.
7. If thinner soup desired, add milk.
8. Serves 4.
9. (Good with spinach salad and rye bread).
