PEANUT BUTTER SOUP
Ingredients
3 tbsp. butter
1/4 c. chopped celery
1/4 c. chopped onion
3 tbsp. flour
1/8 tsp. salt
1 c. milk
1/2 c. peanut butter
1 c. or 10 3/4 oz. can chicken broth
plus water to make 2 cups.

Instructions
1. Melt butter in 2 quart saucepan.
2. Add celery and onion.
3. Saute 5 minutes.
4. Blend in flour and salt.
5. Cook until smooth, stirring constantly.
6. Remove from heat.
7. Gradually add milk, cook over medium heat, keep stirring until thickened.
8. Boil and stir 1 minute.
9. Add peanut butter, stir until blended, stir in broth, heat to serving temperature (do not boil).
10. Yield 4 cups.
