Sage and Maple Sausages
Ingredients
2 slices bacon, chopped
1/2 cup onions, finely chopped
3/4 teaspoon thyme
2 tablespoons real maple syrup
1 teaspoon sage
1/2 teaspoon curry powder
1/2 lb bulk pork sausage
1 tablespoon vegetable oil

Instructions
1. Saute' bacon until crisp.
2. Remove from pan and drain.
3. Keep drippings.
4. Add the onion and thyme to the bacon drippings.
5. Saute' until the onion is tender, 4 - 5 minute 6. Remove most of the bacon grease from the fry pan.
7. Mix in the bacon, maple syrup, sage and curry.
8. Place sausage in a bowl.
9. Add onion/bacon mixture.
10. Mix well.
11. Form into 4 3" patties.
12. (Make ahead if you want).
13. Heat oil in skillet.
14. Fry sausage about 5 minutes per side or until done.
15. Drain and serve.
