High Protein Blueberry Muffins
Ingredients
muffins
1/4 cup butter
1/3 cup brown sugar, packed
1 egg
1 1/2 cups whole-wheat flour
1/3 cup wheat germ
1/4 cup non-fat powdered milk
1 1/2 teaspoons baking powder
1 cup skim milk
1 cup blueberries
crumb topping
1/4 cup brown sugar, packed
1/3 cup whole-wheat flour
1/2 teaspoon cinnamon & 1/4 cup butter

Instructions
1. Cream together the butter and the sugar.
2. Beat in the egg.
3. In another bowl, combine all of the dry ingredients.
4. Mix well.
5. Add dry ingredients alternately with milk to the butter mixture.
6. Stir until combined but not over beaten.
7. Fold in blueberries.
8. Fill greased muffin tin.
9. Sprinkle Crumb Topping over each muffin.
10. Bake at 400 degrees for 20 minutes.
11. Let muffins cool a few minutes before taking them out of the pan.
12. CRUMB TOPPING.
13. Combine the brown sugar, flour and cinnamon.
14. Cut in the butter to form pea-sized crumbles.
