Pumpkin (Or Applesauce) Pancake Mix for Xmas Gifts
Ingredients
2 cups all-purpose flour
3 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
2 cups milk
1 cup pumpkin puree (or cinnamon or caramel applesauce)
2 eggs
2 tablespoons vegetable oil
2 tablespoons apple cider vinegar

Instructions
1. In a large bowl, mix milk, pumpkin, egg, oil and vinegar in 1 bowl.
2. In another bowl, combine flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt.
3. Stir into the pumpkin mixture just enough to combine.
4. Let sit 5 minutes before cooking.
5. Heat a lightly oiled griddle or frying pan over med-high heat.
6. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
7. Brown on both sides and serve with butter and hot maple syrup.
