Christmas Doughnuts
Ingredients
6 eggs
2 cups sugar
1/4 cup vegetable oil
1 teaspoon lemon extract
7 1/2 cups all-purpose flour
6 teaspoons baking powder
2 teaspoons salt
1 teaspoon ground nutmeg
1 cup milk
1 gallon peanut oil
2 cups confectioners' sugar

Instructions
1. In a mixing bowl, beat the eggs, sugar and oil.
2. Add the lemon extract and mix well.
3. Combine the flour, baking powder, salt and nutmeg; stir into egg mixture alternately with milk.
4. Cover and refrigerate overnight.
5. Divide dough in half.
6. Roll out one portion to 1/4-inch thickness.
7. Cut with a doughnut cutter or cookie cutter that is 1-1/2-inches round.
8. Repeat with remaining dough.
9. In an electric skillet or deep-fryer, heat oil to 375 degrees F.
10. Fry doughnuts for about 4 minutes or until golden brown, turning once with a slotted spoon.
11. Drain on paper towels.
12. Dust with confectioner's sugar.
