CHOW MEIN WITH SHRIMP AND PORK
Ingredients
½ pound Noodles --Chinese fresh wat
9 tablespoons Oil
4 ounces Shrimp; shelled, de-veined
1 ¼ teaspoons Salt
½ teaspoon Cornstarch
½ pound Lean pork -- shredded
1 tablespoon Sherry
2 tablespoons Soy sauce -- light
½ teaspoon Sugar & ½ pound Bok choy
¼ pound Mushrooms -- sliced
2 tablespoons Chicken stock
1 teaspoon Cornstarch -- dissolved in
2 teaspoons Water

Instructions
1. Drop noodles into boiling water and boil for five minutes.
2. Rinse under cold water.
3. Drain.
4. mix with 1 T oil.
5. Set aside.
6. Mix shrimp with 1/4 t salt and cornstarch.
7. Heat 1 T oil to 400 in wok and stir fry shrimp until they turn pink, about 1 minute.
8. Remove.
9. Heat 2 T oil to 400.
10. Stir fry pork until color changes.
11. Add sherry, 1 T soy sauce and sugar.
12. Stir fry 1 minute.
13. Remove.
14. Heat 2 T oil to 400.
15. Stir fry bok choy 1 minute.
16. Add pork, mushrooms, 1 t salt, and 1 T soy sauce.
17. Add stock.
18. Cook 3 minutes.
19. Thicken with dissolved cornstarch.
20. Pour in shrimp and bring to boil.
21. Remove.
22. Heat 3 T oil to 400.
23. Turn down to 350 and stir fry noodles until outside is golden brown but inside is soft.
24. (They will form a cake).
25. Cook 5 minutes on each side.
26. Remove to platter.
27. Place cooked mixture on top of noodles.
