Cheesey Bacon Meatloaf

Medium Onion -- chopped

Cup Pork Rinds -- finely crushed

Cup Cheddar Cheese -- shredded
Salt and Pepper to taste

Instructions
1. Preheat oven to 400 degrees.
2. Cook the bacon until it is about three quarters done (not yet crispy), then chop it into small pieces.
3. Combine the ground beef, bacon, eggs, onion, pork rinds, and salt and pepper in a large bowl and mix well.
4. Place in loaf pan and bake, uncovered, for 40 minutes.
5. Add the cheddar cheese and bake until melted, about 5 more minutes. Enjoy!
